Watermelon
Surprise
This is an excellent dinner party or special
occasion desert, suitable for low fat diets. It looks very
inviting and colorful on the plate.
Ingredients:
4 slices watermelon
3 medium pears, peeled
1/3 cup apple juice (sugar free)
2 cups blackberries
Instructions:
Chill the watermelon slices. While the watermelon is
chilling, peel and slice the pears, removing the cores.
Put the pear slices into a blender and add the apple juice.
Blend to a fine puree.
Remove watermelon slices from the fridge and cut each slice
into quarters, removing the seeds and rind. Arrange on four
large dinner plates. Pool some of the pear sauce in the centre
and then drizzle decoratively over the watermelon slices, and
arrange the blackberries on top. Chill until you are ready to
serve.
